The Twice Cooked Pork (Hui Guo Rou), sister dish of the Fried Pork with Salted Pepper, attracts many diners at home and abroad. It is so named because the pork is cooked twice: being boiled first and then fried. The dish, which is regarded as the top one among all Sichuan dishes, tastes quite good with broad bean paste and looks attractive with garlic sprouts added.
